Erhvervsakademi Aarhus
Business Academy Aarhus presents:
- In collaboration with FoodRemade and Brænderiet Enghaven, Business Academy Aarhus has participated in a project focused on the utilization of unsold bread from Salling Group. The Academy showcases some of the innovative products from the project – including gin and aged grain spirits – demonstrating how surplus food resources can be transformed into new value-added products.
- Business Academy Aarhus also presents the project “Lupin&SoyFoods”, supported by the Plant Fund, which explores the potential for cultivating lupin and soybeans for food production in Denmark.
- Students from the Professional Bachelor’s degree in Food Technology will be presenting the outcomes of their innovation module, where they have developed practical solutions and new food concepts with a focus on sustainability.
Institut for Fødevarevidenskab, AU
Tianzhen Xiao, PhD Student CSC, Department of Food Science, Aarhus University presents the variation in the composition of storage proteins, minor proteins and amino acids across faba bean cultivars, which is believed is being able to support breeders to cultivate favorable varieties and food industries to utilize faba beans in a better way.

Meet NOLA Protein Ingredients – a spinout from Aarhus University developing high-quality rapeseed protein ingredients for food. Backed by soft funding from SpinOuts DK and Innovation Fund Denmark, NOLA is on a journey to turn rapeseed into a valuable food ingredient to support a more resilient and circular food system.
